Air-Fried Tofu and Veggie Stir Fry

If you've never tried air frying tofu, you are seriously missing out. I typically bake or pan fry my tofu to get it crispy, but instead I marinated this time and popped it in the air fryer and it was unreal.


Stir fry's are one of the best meals to prep for the week, or just throw together quickly for dinner! I love how easy they are to alter to whatever veggies and ingredients you like, and they never disappoint. You can also pair it with any grain you like; you could do rice noodles, rice, cauliflower rice, or whatever else you like! I went with red quinoa because that's what I had on hand, and it was a great combination!




INGREDIENTS FOR THE STIR FRY:

1/2 cup quinoa

broccoli

mushrooms

carrot

onion

bell pepper

1 tbsp olive oil

1 tbsp sesame oil

1 tsp garlic powder

1 tsp ginger powder

3 tbsp coconut aminos

1 tbsp sriracha

1/2 tsp salt

1 tbsp maple syrup


INGREDIENTS FOR THE TOFU:

extra firm tofu

1 tbsp sesame oil

1 tsp garlic powder

1 tsp ginger powder

3 tbsp coconut aminos

1 tbsp sriracha

1/2 tsp salt

1 tbsp maple syrup


HOW TO:

1. Cook the quinoa in 1 cup of water until it is fluffy (bring the water to a boil, then lower to a simmer while covered and cook for roughly 10-15 min).

2. Chop all the veggies and add them to a sauté pan in the olive oil- onions for the first 3 minutes, then the rest.

3. Chop the tofu and mix it with the sauce.

4. Add the tofu to the air fryer at 400 for 12-15 minutes.

5. Once the tofu starts, add the sauce to the pan of veggies and let it cook for about 10 minutes.

6. Assemble it all in a bowl and top with black sesame seeds and green onion.
