Pumpkin Pie Overnight Oats
Fall. is. here. FINALLY!!! I don't know what better way to kick off this season than oats. These can easily be made the morning of and cooked like you would any regular bowl of oats if you prefer hot oats over overnight oats! These would also be perfect with granola on top to give it even more texture! This recipe can be prepped for the week or made each day :)
1/2 cup oats
1/3 cup canned pumpkin
1 cup milk of choice (I used almond)
2 tsp coconut sugar
1/2 - 1 tsp of cinnamon, depending on how cinnamon-ey you like it! 1/4 tsp nutmeg
1/4 tsp cloves
1/4 tsp ginger
2 tbsp flax
1 tbsp collagen
sliced banana, coconut, walnuts
1. Combine all dry ingredients in a bowl or container until combined evenly.
2. Add pumpkin and milk and mix!
These can be easily vegan if you don't add the collagen, and if you like sweeter oats feel free to add more coconut sugar! Also if you have pumpkin pie spice seasoning you can add up to 1 tbsp of that instead of all of the spices listed.
